When it comes to written music for solo piano, I must confess that I think:
1) Edwards Grieg's "Bryllupsdag på Troldhaugen" is the best piece ever written;
2) the best interpretation of "Bryllupsdag på Troldhaugen", as far as I've heard, is this one by Mogens Dalsgaard:

I might add that I do not hold the piano as an instrument extremely high, relative to other instruments, nor written music relative to other musics. And that there are of course, besides Grieg, a few other composers who also wrote fucking great tunes for solo piano (primarily Beethoven, Debussy and Bartók).
@rasmusfleischer Very nice piece and performance. Did I notice a touch of Debussy in there, or is it the other way around?
One composer who’s main target is not solo piano but sometimes does wonderful renditions of his own work on solo piano is Benny Andersson. Even if the piano as an instrument is quite limited in its expression, I love his treatment of it.
@ahltorp The relation between Grieg and Debussy is an interesting one. I totally feel the relation. Anyway, it's rather the younger Debussy being influenced by older maestro Grieg.
